Red Lentil Soup
with Lemon
This hearty legume soup inspired by the flavors of India starts with caramelized yellow onions with garlic and concentrated tomato paste as a base with tender and nutritious red lentils and sweet, diced carrots. Whole cumin seeds, fresh black pepper and a hint of cayenne are balanced with the brightness of pure lemon juice for a satisfying flavor package that warms the body like a dose of golden sunshine.
